Egusi soup is a Nigerian delicacy that is practically enjoyed across all geographical zones. Melon seeds make the chief ingredient used in the preparation of this soup. Interestingly, there are different methods of cooking egusi soup that yield picture perfect and delicious results.

While making this soup, I added “Iru” also known as Locust beans which is a must-have ingredient in the Yoruba kitchen to produce a distinct taste common to the Yorubas. However, that step might be skipped and you will equally be getting an absolutely gratifying pot of egusi soup.

INGREDIENTS NEEDED.

  • Ground egusi or melon seeds.
  • Ugwu or pumpkin leaves.
  • Beef (any protein of choice).
  • Meat stock.
  • Dried fish.
  • Tomato paste (Tomato and pepper).
  • Palm oil.
  • Onions.
  • Iru.
  • Seasoning cubes.
  • Salt.
